The manuscript of Sion, preserved at the Bibliothèque du Valais, enables us to go back to the 13th Century for its cooking and allows us to present 131 recipes (Venison de Cherf Fraiche, Sanglier Sablé et Cerf, Chevreau Sauvage, Boully Lardé, etc.), with an explanation of the text and then a selection of some of the recipes for today’s table. The first part proposes facsimiles of the manuscript (used in the kitchen), the second photographs of the reconstituted dishes.
